Have a good feeling: Quality control of alternative foods
The consumption of vegetarian and vegan products has long been in line with everyday consumer behavior in large parts of society. Consistently high food quality is just as important for consumers as it is for manufacturing companies. BUCHI’s near-infrared technology can make a valuable contribution to the quality of these products along the production and value chain and check whether recipes are being followed and nutritional information is being adhered to. Faulty batches are thus detected at an early stage and their consequences can be minimized.
Even the raw materials at the start of the production chain can be monitored efficiently. Poor quality can be detected much more reliably than with conventional methods and does not even reach the processing stage. High protein levels in wheat and pulses are detected so that target values in recipes can be better adhered to.
The BUCHI X-Sential and X-One product lines allow the monitoring of mixing, extrusion and drying processes, so that process monitoring and corrections are possible in real time.

As a standalone solution with a high protection class (IP 69), the ProxiMate™ is either used directly on the production line for checks or in the laboratory to enable final approvals by determining nutritionally relevant ingredients such as protein, fat, salt and sugar.
The BUCHI AUTOCAL® software makes it very easy to set up and maintain calibration models. During the calibration phase, analysis results from primary determination methods in the laboratory (e.g. Kjeldahl for protein determination) are used.
A typical example of a calibration used to check nutritional information is shown below:
