Spray drying has been applied to the production of spruce needle extracts. Spruce needles contain a variety of beneficial bioactive compounds, such as vitamin C, phenolic acids, and flavonoids, which have antioxidant and anti-inflammatory properties. The spray drying process involves atomizing a liquid mixture of spruce needle extract and a suitable drying agent into a hot air stream to evaporate the liquid and produce a fine powder. The optimized spray drying conditions have been found to preserve the bioactive compounds and produce a stable and easily stored powder that can be used in various applications, such as food and beverage, cosmetics, and pharmaceuticals.
