Nitrogen and protein determination in tofu according to the Kjeldal method (back titration)
An easy and reliable method for the determination of total nitrogen and protein in tofu according to the Kjeldahl method, as described in the AOAC 945.39 regulations, is introduced below. The samples are digested using the SpeedDigester K-436 and K-439. The distillation and back titration is performed with the KjelFlex K-360, external dosage device and Metrohm 848 Titrino plus.
