Spray Drying of Invert sugar (Date pulp)
Invert sugar, also known as inverted sugar, is a mixture of glucose and fructose obtained from sucrose by hydrolysis. Spray drying is a popular method for converting date pulp into a powder that is easy to store and use in various food applications. Invert sugar made from date pulp is used in a wide range of products such as jams, jellies, bakery products, and confectionery. The spray drying process allows for quick and efficient drying of the sugar solution, resulting in a fine powder that can be easily incorporated into food products. The powder form of invert sugar provides better stability and shelf life than the liquid form. The spray-dried invert sugar also has improved solubility and flowability.
