Spray drying of sodium alginate is a widely used technique in the food industry for the production of powders with improved stability and solubility. Sodium alginate is a natural polysaccharide obtained from brown seaweed and it is widely used as a gelling, thickening and stabilizing agent in food products. The spray drying process involves the atomization of a sodium alginate solution into droplets, which are then dried rapidly in a hot air stream, leading to the formation of a fine powder.
The quality of the final product is affected by several parameters such as the concentration of the sodium alginate solution, the inlet and outlet temperatures, and the flow rate of the drying air. The resulting powder has improved solubility and stability compared to the original liquid form, and it can be used in various applications such as encapsulation of flavors, pharmaceuticals, and dietary supplements. Additionally, the spray drying process allows for the production of uniform particles with controlled size and morphology.
