Spray Drying of Sodium Alginate

Spray drying of sodium alginate is a widely used technique in the food industry for the production of powders with improved stability and solubility. Sodium alginate is a natural polysaccharide obtained from brown seaweed and it is widely used as a gelling, thickening and stabilizing agent in food products. The spray drying process involves the atomization of a sodium alginate solution into droplets, which are then dried rapidly in a hot air stream, leading to the formation of a fine powder.
