Spray Drying of Sodium Alginate

Spray drying of sodium alginate is a widely used technique in the food industry for the production of powders with improved stability and solubility. Sodium alginate is a natural polysaccharide obtained from brown seaweed and it is widely used as a gelling, thickening and stabilizing agent in food products.
